This salad is Healthy and Delicious!!!
1 large zucchini
1 teaspoon coconut oil
2 carrots( chopped)
3-4 basil sprigs( remove leaves, throw away steams, and chop leaves)
1 stalk celery( chopped)
2 cloves garlic(peeled and chopped fine)
1 cucumber( chopped)
1 Tbs. olive oil
1 teaspoon sriracha sauce
*organic when possible for all ingredients
1. Spiralize the zucchini with a spiralizer into noodles or use a cheese grater
Spiralizers are a inexpensive and FUN!
2, Stir fry the zucchini:
In a frying pan heat coconut oil on medium heat, once hot add chopped garlic
cook 1 minute and then add zucchini noodles. Add sriracha sauce and cook till noodles are al dente.
3. In a large bowl toss remaining ingredients
4. Put in fridge and serve cold
